OMG Keto bacon cannoli

Yeah, i said bacon cannoli 

If you love bacon and you love cannolis you will absolutely LOVE this keto friendly Bacon Cannoli recipe. 

Ingredients

  • 1 Cup of Heavy Cream
  • 1 Cup of Whole Milk Ricotta
  • 2oz Cream Cheese
  • 1.5 tsp Vanilla Extract
  • 0.5 tsp Almond Extract
  • ½ Cup Stevia (Stevia is keto friendly, If you don't care about that, use powdered sugar)
  • 1 tsp Ground Cinnamon

Directions

Mix heavy cream until it looks like whupped cream. Add vanilla and almond extract, stevia and cinnamon and mix thoroughly. Add ricotta and cream cheese and mix thoroughly. Chill mixture in refrigerator for at least 30 minutes.

Cook 3 strips of bacon together over medium-ish heat until your desired crispiness.

Note:  If your first batch of bacon is so crispy that you cannot fold it,  eat it all and then try another batch bacon.  You need to be able to fold the bacon to make cannoli's. 

Put cannoli mixture in the center of the 3 cooked strips of bacon. Fold one side up and to the right of the mixture and the fold the other side down forming a shell around the bacon. Use as spoon to fill in the rest of the bacon shell with the cannoli mixture.
