Smoked Corned Beef sliders

Smoked Corned Beef

Take a 4lb corned beef and apply Dizzy Pig's Pineapple Head rub to both sides. Smoke until internal temp reaches 195 and pull off and let sit for an hour. 

Sliders

Take a pack of King's Hawaiian or Martin Potato dinner rolls. Keeping the rolls attached to each other slice through length-wise to remove the tops and set aside. Then take the bottom part and put in in a baking dish and:

  1. Spread Thousand Island on the bottom piece of the rolls
  2. Add a layer of swiss cheese
  3. Add a layer smoked  corned beef
  4. Add another layer or swiss (you can never have too much cheese)

Next, take the tops and spread thousand island to the bottom side and place on top of the baking dish. 

Turn your smoker up to 350 degrees and then:

  • Place the baking dish on the smoker for 10 minutes (until the cheese is melted)
  • Remove and brush melted butter on the tops of the bread
  • Place back on the smoker for another 2-3 minutes until the tops of the sliders get toasty.

Pairs great with green beer!

Hack: If you do not want the extra smokey flavor, just cook it in the oven.
