Holy mole jalapeño popper dip

This dip is a great alternative to boring party dips. Cook everything in your smoker for an amazing dip that your guests cannot resist!

Step 1

In a medium sized bowl, Combine:

  • 1 - 8oz pack of Cream Cheese (softened)
  • 1/3 Cup of Mayo
  • 1/3 Cup of Sour Cream
  • 1/4 Cup of Whipping Cream
  • 1.5 Cups of Shredded Cheddar Cheese
  • 1.5 Cups of Colby Jack Cheese
  • 1 Tablespoons of Dizzy Pig's Mole Rub
  • 6 slices of cooked bacon

Don't have Dizzy Pig's Mole Rub? Buy it here or use your favorite BBQ Rub, Taco Seasoning, or Chili Spices.

Step 2

Cut 3 large poblano peppers in half and set them on the smoker at 225 degrees for 60-90 minutes or until charred. Dice and combine with the Step 1 mixture.

 

Want to make it more spicy? Use 5 jalapeño's instead of the poblanos.

Want to cook it faster? Cook at 350 degrees or until charred.

Step 3

Transfer to 8 x 8 baking dish and cook at 350 degrees for 15-20 minutes or until the dip becomes hot and bubbly

Real BBQ Dude Hack: Cook the dip on the smoker, rather than the oven for over the top smokey flavor.
